Air Fried Salmon and Mushrooms

With a special glaze!

Do you have an air fryer yet? At first I didn’t want one because I rarely use my instant pot but we gave in to the hype and got one. We have the Gourmia one from Costco. We LOVE it! Food comes out perfectly every time! Ours is pretty large, I’m glad I have somewhere to store it. If you can afford it and have the space, I recommend it. There are smaller and cheaper ones elsewhere. If enough people want to to know, DM me on Instagram and I can ask people what brand they have. I put the one I got my sister in my Amazon shop. It’s perfect for single users. She uses it all the times!

Salmon is one of my favorite things to make in the air fryer. It’s just so easy and it comes out delicious every time. When I was flipping thorough my air fryer book I saw that salmon and mushrooms cook around the same time. Since mushrooms are one of my favorite vegetables I had to try this. The sauce I made is super tasty. I brushed some on the salmon, saved 1/2 teaspoon and used the rest for the mushrooms. I used the saved portion for the wilted spinach, see more below. The mushrooms I think were my favorite part. The flavor was amazing and they had a slight crisp that was to die for. I could see myself making the mushrooms often and putting them on a salad or bowl.

I actually had intended to make a salmon salad this night but I didn’t know what I was going to do with the salmon. Once I put my glaze together I decided to do a side of wilted spinach instead. I used butter, 1/2 tsp of the glaze that I scraped up and some garlic. Easy and perfect. By the way, you don’t have to use butter for the spinach but but does make everything better. I didn’t include this in the recipe because it’s so simple but feel free to check out my TikTok video.

Air Fried Salmon and Mushrooms

Ingredients

Glaze

Salmon

Mushrooms

Wilted Spinach

Instructions

  1. Make the glaze by adding all the ingredients to a small bowl and whisking until everything is smooth. 

  2. Brush the sauce on the salmon and season with 7 spice and sesame seeds and put aside.

  3. Add the rest of the sauce to a large bowl with the mushrooms and about 1 tbsp. of oil (or more). Mix until well coated.

  4. Preheat the air fryer at 400. Once preheated, take out the basket and gently drop in the salmon, surround it with the mushrooms then cook 8-10 minutes. 

  5. Serve on it's own or with wilted spinach as a side.
