Air Fryer Tahini Veggies

I'm making a large effort to eat more vegetables. These Tahini vegetables are so tasty. They would be a great side dish with some fish or you could add some tofu. I ate a big bowl as is for dinner because sometimes you just need a bowl of veggies!

Tahini is a middle eastern condiment made from sesame. It's commonly found in hummus. It is great for dressings, dips and marinades. It has a peanut buttery taste that many love. I use a bit in this air fryer salmon glaze and this creamy salad dressing. If you aren't already using tahini, you will want to start!

You can use pretty much any vegetable you want but you will want to pay attention to cooking times. Your air fryer should come with a book that tells you how long they suggest. Cross check my cooking times with your book to make sure you are getting the right time. My Gourmia air fryer from Costco had an average of 10 minutes to cook for most the vegetables. The time for the bell pepper was based on cooking a whole bell pepper in my book, so I took a chance. I used sliced baby bell peppers, trimmed green beans, broccoli heads and carrots. I used precut green beans and broccoli and I sliced up those baby bell peppers in quarters or more. I cooked the carrots separately because the air fryer was quite full with the other vegetables and carrots need longer to cook. I peeled and sliced my carrots into thinner pieces while the other vegetables were cooking for 10 minutes. If you are planning to cook them all at once then I would start with your carrots then add in the rest when it gets down to the 10 minutes. When you are done, check all your vegetables to make sure they are done.

The serving I made was about 3 big bowls of veggies. You could stretch it out if you are serving as a side dish. When eating leftover I added some crumbled goat cheese. YUM!

Description

Delicious vegetables to eat on their own or as a side. 

Ingredients
  • 8 oz bag trimmed green beans
  • 6 oz bag broccoli head
  • 5-7 baby bell peppers (sliced)
  • 4 large carrots (sliced)
  • 3 tbsp tahini (plus more for carrots)
  • 1/2 tsp garlic salt (plus more for carrots)
  • 3/4 tsp turmeric (plus more for carrots)
  • avocado oil
Instructions
  1. If you are using bags of prepared broccoli and green beans, dump about half or so of each bag into a large bowl. If not, chop your veggies first. 

  2. Slice you baby bell peppers into thin slices by cutting in half then each piece in half. Smaller if needed. Place in bowl. 

  3. Drizzle some oil and toss. 

  4. Make sure your tahini is well mixed then spoon in about 3 tables spoons into the bowl and mix to coat. 

  5. Add in garlic salt and turmeric and mix to combine. 

    Add more of anything to taste.
  6. Preheat your air fryer at 400 degrees for 2 minutes then place the bell peppers, broccoli and green beans in and cook for 10 minutes. 

    If you want to cook them all at once, cook the carrots at 400 degrees for 15 minutes, at 10 minutes add in the rest of the vegetables. When done cooking check the vegetables to make sure they are cooked.
  7. While the mixed veggies are cooked, peel and slice your carrots. Add in about 1 tbsp of tahini, oil and a dash of  turmeric and garlic salt. Mix until combined. 

  8. When the mixed veggies are done, add to a bowl and cover. Cook carrots for 14-15 minutes at 400 degrees. 

  9. Eat on its own, with fish or tofu.
