Bacon Wrapped Dates

I mean, bacon wrapped anything you can’t go wrong! These dates are so easy, if not a bit time consuming to remove the seeds of the dates. I found it to be sort of meditative in the repetitive act of prepping these. These dates are stuffed with goat cheese, wrapped in bacon and baked to perfection. These are great as an appetizer or as a snack too! They make great salad toppers as well.

If you are trying to figure out how many dates to make, I think it’s safe to do at least 3 dates per person. The dates are small so you only need half a slice of bacon to wrap it. Prepping the dates can be a bit messy. I recommend using kitchen cooking gloves so you don’t feel you need to wash your hands every 5 minutes. I got mine on Amazon, I put them in my Amazon store under “kitchen” if you want to take a look. The reason why it’s messy is because first you cut the date to de-seed then you stuff with goat cheese and wrap in bacon. I like to do this 1 step at a time. First I de-seed all the dates, then I stuff with goat cheese and lastly I wrap with bacon. You can 100% prep these in advance. Recently, I prepped these the day before and stored in the fridge until I was ready to bake. When baking, you can brush with maple syrup before baking. This is tasty but is a step I skipped this time.

  1. Cut a slit in the date and remove the seed. Continue with all the dates and set aside. 

  2. Place the goat cheese in a ziplock bag. Using room temperature goat cheese will be easier. Cut off the corner of the bag to use to pipe the cheese into the hole of the date where the seed was. Continue with all the dates.

  3. Use half a slice of bacon to wrap, make sure you can't see any of the goat cheese. Do this for all the dates and either store in tubberware in the fridge or line crease down on the rack on top of a cookie sheet (the rack helps the bacon drain and crisp up).

    Before baking you can brush with maple syrup if you want.
  4. Bake at 350 degrees for 25-30 minutes or until bacon is cooked. Serve warm.
