Bacon Brownies

Years ago, while living in Los Angeles, I was working as a waitress at a Mexican Restaurant. I was newly diagnosed with celiac disease. One of my friends and colleagues would bring in bacon brownies to work. Unfortunately I never was able to try them due to gluten but I haven't stopped thinking about them! I finally decided to give them a try after my husband brought me a bacon covered in chocolate snack from the gas station. What I didn't like about the snack was that the bacon was softened. I knew to make sure my bacon in the brownies is extra crispy.

If this idea doesn't appeal to you then feel free to omit the bacon. This is an excellent brownie recipe! I cooked my own bacon but you could also use already made bacon bits. I get some from Costco that last a while and I literally put on everything from salads to quiche and apparently brownies!

  • 1 1/3 cup cup 4 cup gluten free flour
  • 3/4 cup 100% pure baking coco
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 2/3 cup granulated sugar
  • 3/4 cup butter (melted)
  • 2 tbsp water
  • 2 eggs
  • 2 tsp vanilla extract
  • powdered sugar (optional)
  • 7 pieces of bacon (extra crispy)
Instructions
  1. Preheat the oven to 350 degrees

  2. Grease your brownie pan.

  3. Combine flour, cocoa, baking powder and salt in a medium bowl.

  4. Melt you butter int he microwave. 

  5. Add the granulated sugar and water to the butter.

  6. Stir in the eggs and vanilla extract. 

  7. Pour the butter mixture into the flour bowl and mix together. 

  8. Crumble your bacon really well and mix it into the brownie mixture. 

  9. Pour the mixture into the baking dish and bake for 18-25 minutes or until you can insert a toothpick and it comes out clean.

  10. Let the brownies cool. 

  11. Sprinkle some powdered sugar on top and ENJOY!
