BBQ Baked Chicken

Before I dive into the recipe I just wanted to say how thrilled I am with how many of you contributed to my celiac disease and gluten free diet question post. I love this community! Ok, now on to cooking.

Yep, I’m bringing it back to basics with BBQ baked chicken! This is such a classic. It’s great to grill but super easy to bake. I typically do 1 of 2 ways, I will describe both.

  1. Coat with BBQ sauce before baking: This allows the sauce to caramelize and you can get a little crispy. This my probably my favorite way. Below is a picture straight from my Instagram.
  1. Coat the last 10-15 minutes: You get the sauce without much caramelization so it’s just juicy chicken and sauce. The recipe image is the example. You can really see the difference.

Either way you bake it, season your chicken before. Drizzle some oil on both sides and season generously. I typically use garlic salt, paprika and some white pepper. Lastly you just bake it at 375 degrees for 20-30 minutes or until you reach an internal temperature of 160 degrees. I usually like to eat my chicken with some steamed broccoli with melted cheese. If you want to save time, buy the bags of broccoli that you can just poke and microwave for 2-3 minutes.

The recipe cooks for 4 because I usually will cook at least 4 chicken breasts so that I have food to bring to work the next day. Whenever possible I’m cooking for leftovers because leftovers equals meals planned in my world which means less cooking. Remember, like you I have a full life. I like to cook but I don’t want to be cooking all day every day. Gotta enjoy your life too!

  1. Lightly oil your chicken then season.

    You can also add to a large ziplock bag.
  2. If you are going to bake with BBQ wash then use a kitchen brush to add BBQ all around the chicken breasts. 

  3. Bake at 375 degrees for 20-30 minutes.

    If you didn't add the BBQ sauce then brush it on for the last 10-15 minutes.
  4. The chicken is done cooking when the internal temperature is 160 degrees. After it's done, let it sit for 10 minutes. 

  5. Serve with steamed broccoli with melted cheese.
