BBQ chicken tostadas are one of my favorite lazy dinner meals. I'm usually making it with leftover shredded chicken that I have in the fridge. I heat it, toss with BBQ sauce and add it on top of tostadas. Then I add red onion slices, shredded cheese and bake or broil until the cheese is melted. I enjoy it so much I've even made chicken just so I can eat this. It's so easy to cook chicken in the crockpot, I rarely cook it any other way if I'm eating shredded chicken. Just add about 1-2lbs of chicken to the crockpot with about 1/2-3/4 cup of BBQ sauce and cook on high for 4 hours. Remove the chicken when it's done cooking, shred it and return in to the crockpot. Now mix it together to get all the juices and add more BBQ sauce to taste.
The BBQ sauce adds so much flavor you can get away with not seasoning however I do generally add a bit of garlic salt and paprika. For my topping, I usually use sliced red onions but sometimes I make my own pickled red onions and use that. It's so tasty! DM me on Instagram and I'll send you my quick pickled onions recipe. I love the vinegar taste with the BBQ sauce. That is why I always pair this with the Crystal Hot Sauce. Yes, I am a hot sauce snob. Certain hot sauces and meals just go together. Add your chicken breasts to the crockpot and season with garlic salt and paprika.
Add the BBQ sauce and cook on high for 4 hours.
When it's done cooking, remove the chicken and shred it. Add it back to the crockpot and mix with the juices. Add more BBQ sauce to taste.
Preheat oven to 350 degrees.
Cut your red onion (dice or thin slices depending on your preference).
Prepare your baking sheet with tostadas. Top with BBQ chicken then the red onion.
Lastly, top your tostadas with cheese and broil or bake for a few minutes until the cheese is melted.
Add Chrystal hot sauce or your favorite, and enjoy!
