You are probably familiar with jalapeno poppers, a classic and tasty appetizer using a cream cheese and cheese mixture stuffed into jalapeños slices and wrapped in bacon. I make those often because everyone loves them. These bell pepper poppers use bell peppers instead of jalapeños, and they are stuffed with buffalo chicken dip so you still get the heat. They are wrapped in the healthier and quite tasty alternative of turkey bacon. I didn't know what to expect with these and I must say, they are very tasty!
The first time I made them my husband was off for a dudes night. I totally meant to save him some. Seriously. Since I didn't, I knew I had to make them again. This recipe would be perfect if you have some leftover crockpot buffalo chicken dip. Otherwise, just pick up some prepared Trader Joe's buffalo chicken dip. It's pretty addictive. I like the crockpot version better but you know how I love a quick meal so I definitely have bought this a few times. Great with veggies for parties! You can find the video of the recipe here.
Ok so I only used 3 bell peppers because I was making a snack for my husband and I. This is easy to multiple but make sure you have enough turkey bacon. You can use 1/2 slice for smaller bell pepper halves but you may need to secure them with 2 toothpicks. Be careful when wrapping the bell pepper, turkey bacon isn't as malleable as regular bacon. You will want to make sure the buffalo dip is completely covered, or as much as best as you can, before you cook it so it doesn't leak. Don't be shy about using the toothpicks.

Cut the heads off the bell peppers and cut them in half so that each half has a deep side. De-seed.
Stuff with homemade or store bought buffalo chicken dip.
Wrap with 1/2 to 1 slice of turkey bacon and secure with a toothpick or 2.
Preheat air fryer to 400 degrees.
Air fry for 12 minutes at 400 degrees.
The poppers are done with the turkey bacon looks browned and crispy. Enjoy!
