Baked Blueberry Truffle Brie

For Christmas I was supposed to make that crab dip but I forgot to buy cream cheese and apparently ALL grocery stores are closed on Christmas in Albuquerque. It was never like that in Los Angeles. I'm happy for the workers that they got to spend christmas with their families but I just can't be trusted to buy everything I need before a big event or holiday. It's never happened. I literally always forget something.

Anyways, fortunately I had some brie on hand and some new truffle honey my husband got me for Christmas! Brie is excellent because you can top with so many things. The easiest is fresh fruit or jam. My mom had blueberries so that's what I used. I simply added a large handful then baked for 15-20 minutes. I used a cheese knife to burst some of the blueberries and separate the cheese for people to enjoy. Then I drizzled some truffle honey on top. You don't need a lot because a bit of truffle can go a long way. I topped with a good drizzle of regular honey. This went so fast! Everyone loved it!

  • 1 brie
  • blueberries
  • truffle honey
  • honey
Instructions
  1. Preheat oven to 350

  2. Add the brie to a small cast iron skillet and score the top, top with a handful of blueberries 

  3. Bake for about 15 minutes

  4. Remove the brie and check to make sure  the cheese is melty by smashing apart with cheese knife

  5. Drizzle with some truffle honey then regular honey and enjoy
