Crockpot Buffalo Chicken Dip

This is a great party appetizer that I have been making for years. It’s naturally gluten free! People always love this and talk about how good it was. Best part? It’s super simple to put together! If you are looking for something easy to whip together to impress your friends, this is it!

You can certainly use chicken breasts instead of a rotisserie chicken, I’ve done it before. I will cook the chicken in the crockpot the day before and shred it. You will need a few large chicken breasts for this. Use liner for your crockpot so you don’t need to clean it the day before you are hosting. I store the shredded chicken in the fridge until I’m ready to use it the following day. Don’t feel like doing this step? Just get the rotisserie chicken. It really saves some time and rotisserie chickens are affordable. As for shredding the chicken, I used to use a fork until I realized I have fingers. Just pick it apart with your fingers, it goes by much faster. You can use the skin or put it aside. I use some of the skin and toss the rest… or nibble on it.

Someone commented on Instagram that they have seen rotisserie chicken include flour to make the chicken crispy. I haven’t personally seen this on rotisserie but I have seen for some of the other chicken items they put in the same area. It’s another fine example of why you should ALWAYS read ingredients for ANYTHING that you are buying.

You can watch my video of the recipe here. In the video I added the cream cheese first which I don’t do in the recipe below. The reason why I listed the cream cheese last below was to combine all the well flavors together before spreading out the cream cheese so it’ll melt more evenly. If you don’t do this it’s really fine, just stir really well at the end to make sure all the cream cheese is melted into the mixture and there are no clumps of cream cheese.

  1. Using your hands, shred the chicken from the rotisserie and add it to your crockpot.

  2. Add in the Frank's sauce, cheddar cheese and ranch and stir it together to mix. 

  3. Chop up your cream cheese in cubes and spread them around on top of the chicken mixture. 

  4. Heat on high for 1 hour. 

  5. When it's done cooking, stir everything together really sell. Make sure the cream cheese is mixed in. 

  6. Serve with corn chips or veggies, top on bakes potatoes.
