Buffalo Chicken Rolls

You may have already seen me post the video for these delicious buffalo chicken rolls on TikTok. I've made them a few times but failed to take a halfway decent picture. I'm really working on this guy, but I get HUNGRY! LOL. The pictures don't look like much but I'm telling you, this is tasty! It is everything you love about egg rolls but gluten free and with buffalo chicken. The rolling paper is just rice paper. Yup, you read that right. I'm pretty much obsessed with rice paper these days. Check out these lumpia inspired pork rolls. I'm going to have to re-make these apple pie rolls I did a few months ago so I can take a picture and post the recipe. It was AMAZING!

This recipe can be made in the oven or the air fryer. They will leak a bit, but you can prevent this but making sure you tuck the sides in really well. If they leak, no big deal. We just eat them as a snack, but you can totally eat them with a salad or some coleslaw on maybe even cabbage. When making this recipe, I absolutely recommend making your own buffalo chicken dip. I would enjoy some the first night then save the rest to make some of the rolls. If you have a Trader Joe's near you, you can also purchase a container of already made buffalo chicken dip. It's not labeled gluten free but contains no gluten ingredients. I have purchased it a few times and think it's a great appetizer as a dip or these tasty bell pepper poppers, a twist on your typical jalapeno poppers. Buffalo chicken dip is really the gift that keeps on giving!

  • 1 container buffalo chicken dip from Trader Joe's (or make your own, recipe link above)
  • rice paper

  1. Preheat the oven to 425  degrees and get a baking sheet out sprayed with oil. 

  2. Get a large bowl with warm water and soak a rice paper in the bowl for a few seconds. When it's done soaking, gently place on a cutting board. 

    Follow the rice paper package directions for soaking.
  3. Spoon in some of the filling in a horizontal line, slightly more towards you than in the middle, leave some space on the sides to tuck and roll. 

  4. Tuck the sides in, then move the flap closest to you over to roll like a burrito. Place the roll on the baking sheet and repeat this process of preparing rolls. 

  5. When you are done with your rolls, spray them with oil and add to the oven. 

  6. Cook for 17 minutes, flip, then cook for another 17 minutes.

  8. Follow the prep above but cook in the air fryer for 400 degrees for 22 minutes.
