Imitation Crab Ceviche

It’s spring time which means it’s the perfect time for ceviche! This is great for BBQ’s, poolside or picnics. It is lite, refreshing and delicious. If you are gluten free, beware of imitation crab meat with wheat in it. Many have it, double check the ingredients. I was unable to find gluten free crab at Vallarta Market but was able to find it at Ralph’s and most other grocery stores. None were labeled gluten free. Most tostada shells I see are gluten free but never assume! ALWAYS checked your labels. Always. Whenever I assume “that is definitely gluten free” and don’t read the label, is usually when I end up getting glutened. I’ve been gluten free for over 8 years and I know that I always need to read ingredients because I make mistakes too. Read ingredients on butter, on yogurt, on nuts. Back to the ceviche. You will notice I list onion as optional. I usually use onion but sometimes forget. I’m also someone who generally loves onion. This is why I say onions are optional. You can use red or white, though red onion will have a powerful taste and I would generally start with less and add in more to taste. Not all ceviche has cucumber, but I quite like it. For some kick, jalapeños and serano peppers are great. I generally de-seep the peppers. You can add more jalapeños for more heat. Don’t forget to top with your favorite hot sauce!

To prepare the ceviche you can certainly chop your ingredients, but for most I chopped in my small food processor which I got on amazon in a set. I love this thing. This saves some time. The only thing I didn’t chop in there was the fish and the cucumbers because I wanted bigger pieces than I would get otherwise. Feel free to reach out with any questions.

Ingredients

Instructions

  1. Peel 1 package of imitation crab meat into preferred sizes and place in a large tubberware.
  2. Cut your tomatoes in half and place in the mini food processor with cilantro and chop. Dump it in the tubberware.
  3. Cut and de-seed your jalapeños and put in food processor to chop. Then place in tubberware.
  4. Add your juices and ketchup together and mix until ketchup is blended in. Dump in the tubberware.
  5. Peel and chop your cucumber and your onion if using and mix everything together.
  6. Refrigerate until ready to serve. Add in chopped avocado before serving if using. Serve with choice of hot sauce.
