Chia Pudding

Chia seeds are known to contain large amounts of fiber and omega-3 fatty acids, protein, minerals and antioxidants.They are thought to improve digestion and reduce risk factors for heart disease and diabetes. Apparently people will use it as an egg substitute in baking. They can be added to water, as a crunch on yogurt or you can make some pudding!

Chia pudding is so easy and really tasty! All I did was all chia seeds to almond milk with a bit of vanilla extract and let it sit over night. How much chia seeds you use will depend on how thick you like it. I don't love mine super thick and custard like. I would start with my recipe then add more to taste later until you get the consistency you like. Then I added some gluten free granola, fresh strawberries and honey for a tasty and healthy breakfast. The brand KIND Snacks has some gluten free flavored granola I enjoy, I usually get chocolate or peanut butter.

  • 2/3 cup almond milk
  • 2.5-3 tbsp chia seeds
  • vanilla extract (splash)
  • strawberries
  • granola (gluten free)
Instructions
  1. Add chia seeds and almond milk to a tubberware and then add a splash of vanilla extract. Cover with a lid and shake before putting in the fridge overnight or for 2-3 hours. 

  2. After the chia pudding rests, stir together with a spoon to make sure there are no clumps. Add granola, strawberries and drizzle with honey. Enjoy!
