Creamy Chipotle Sauce

Chipotles are one of my favorite ways to bring some heat. With their slightly smokey flavor is works great for tacos to stews. If you ever use the cans, then you know that you usually aren't using the whole thing. Best way to keep it is to blend it all first then save what you don't use in an ice tray. I'll dump frozen leftovers in crockpot stews and soups.

Chipotle sauce is very easy. All you need is greek yogurt, sour cream and lime. I give you measurements but you will want to taste test to see if you need any more lime, heat or creaminess.

Ingredients
  • 1 can chipotles in adobo sauce
  • 1/3 cup sour cream (more to taste)
  • 1/3 cup greek yogurt (more to taste)
  • 1 Lime
Instructions
  1. Add the chipotles into a food processor or blender and blend until smooth. 

  2. Spoon out the chipotle so there is about 2 tablespoons left inside. Set aside the extra. 

    Whatever chipotle you don't use you can put in an ice tray to freeze and use for soups and stews.
  3. Add about 1/3 cup of sour cream and plain greek yogurt plus juice of 1//2 lime to the food processor and blend until combined. Taste test and add anything else more or the yogurt, sour cream, chipotle or lime to get the creamy or heat consistency you like. 

  4. Store in the fridge and use for tacos, burrito bowls and more.
