Chocolate Covered Strawberries

There is something so romantic about chocolate covered strawberries! The best part, they are literally the easiest thing to make and with only 3 ingredients! If you are busy and worried you don't have time to put together something special for Valentine's day, whip up these chocolate covered strawberries and enjoy them with some wine. You can see from the picture that I started to add butterscotch chocolate then decided not too. I forgot to take it out of the picture, but as Julia Child said about cooking, "never apologize!"

We recently got to enjoy some chocolate covered strawberries with some chocolate mousse. Is there such a thing as too much chocolate? I think not! No, the mousse is not from scratch and I'm not mad about it! Can we normalize this? Sometimes you just need a quick and easy dessert on hand. It is not labeled gluten free, but it contains no gluten ingredients. I had this mousse in my pantry and from now on I will always keep it. I prepared the mousse with my hand mixer before guests came over and stored it in the fridge in a piping bag. When I was ready to serve I clipped the tip and squeezed some out into cocktail glasses, which looks so pretty!

Ingredients
  • 2/3 cup semi sweet chocolate chips
  • 3 tbsp coconut oil
  • 12 strawberries
  • sprinkles (optional)
Instructions
  1. Add chocolate chips and coconut oil to a microwave safe bowl and microwave for about 1 minute until chocolate is melted Stir chocolate until creamy. 

  2. Dip strawberries in chocolate and place on a plate with parchment paper. Top with sprinkles before they dry (optional).

  3. Place the plate with strawberries in the freezer for 20 minutes to set the chocolate. Remove and put in fridge until ready to serve.
