Ciabatta Chicken Sandwich

I recently tried the Schar ciabatta rolls and they are amazing! Even my husband commented "they are so soft!". They make excellent chicken sandwiches. If you can't find them, then try a gluten free hamburger bun instead. I've used Trader Joe's buns and they are still excellent! I used the Mediterranean baked chicken but you can bake your chicken however you like. I use a portion of the chicken for the sandwich, usually the end that is less thick. If my chicken breast is really thick then I may cut it more to fit the ciabatta bread how I like.

Sandwich topping are up to your discretion but I spread the Trader Joe's garlic spread on each side before topping with sliced cheese and broiling until melted. Then I added the chicken, Trader Joe's chimichurri sauce, avocado, pickled onions and butter lettuce. I'm honestly getting hungry just writing this blog post up and may need to go make myself another sandwich!

  • Schar gluten free ciabatta rolls
  • Mediterranean chicken (click link above for recipe)
  • butter lettuce
  • pickled onions
  • avocado slices
  • chimichurri sauce (Trader Joe's)
  • garlic spread dip (Trader Joe's)
  • cheddar cheese slices
  • swiss cheese slices
Instructions
  1. Slather the garlic spread dip on each slice of the ciabatta roll.

  2. Add sliced cheddar on one side and sliced swiss cheese on the other. 

  3. Broil in oven until the cheese is melted

  4. Add your Mediterranean chicken breast, cut as needed to fit.

  5. Add sliced avocado. 

  6. Add pickled onions.

  7. Spoon on chimichurri sauce. 

  8. Add butter lettuce.
