Cowboy Caviar

I had been seeing other content creators making cowboy caviar on TikTok, particularly Bria Lemirande, and it just looked so good I had to make a version of it for myself!

Bria makes different versions that all look amazing. What I like about this is that it's another opportunity to clear out your fridge and I love recipes like that! I used: black and pinto beans, black olives, corn, cilantro, avocado, onion, bell pepper, jalapeno, queso fresco and I made a dressing to go with it. I chopped the veggies pretty small. I could absolutely see myself adding hatch green chile next time or a homemade green sauce or salsa. My husband recently made a green sauce by blending together jalapeños with olive oil, seasoning and some vinegar and it was amazing!

This dip serves a lot of people. It would be great for a BBQ or potluck. I didn't get a great picture but trust that it's good! Go check out Bria to see her variations or check out my version below.

  • 1 can black beans (drained/rinsed)
  • 1 can pinto beans (drained/rinsed)
  • 1/2 can 15 oz can black olives (chopped)
  • 1 red bell pepper (chopped)
  • 1 jalapeno (chopped)
  • 1/2 lime
  • 1/4 package queso fresco
  • 3/4 can corn (drained)
  • 1/4 cup loosely packed fresh cilantro (chopped)
  • 1 large avocados
  • 1 small red onion (chopped)
  • Dressing
  • 5 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1/2 lime (juiced)
  • 1 tbsp honey
  • pinch of kosher salt
  • 2 dashes garlic powder
Instructions
  1. Rinse and drain the beans and add to a large bowl. 

  2. Chop up the black olives (if whole) then toss in the bowl. 

  3. Chop your cilantro and add it in. 

  4. Chop your red onion and add it to the bowl. 

  5. Chop the jalapeno and bell pepper and add it in. 

  6. Pour in the dressing and mix together.

  7. Break in the queso fresco and avocado and toss together. 

  8. Juice the other half of the lime over and serve with chips.
