Crockpot Vegetarian Queso

You may have seen from my Instagram story but I recently hosted a murder mystery party. This was the 2nd one I’ve hosted. You can buy the instruction here. You can pick games based on how many guests you will have and can pick through different themes. The games are a lot of work for the host, but they break it down nicely for you into stages. Regardless, it is a lot to keep track of so I had a timeline printed out to help me remember. The game went by pretty quickly, about 1.5 hours then everyone stayed to continue to eat and mingle.

The game setting was on a tropical island, as you may have noticed from some of the pictures. I had some food in theme but I had a lot of food and I was surprised at how much was eaten. This queso was definitely a hit and completely gone by the end. It was my first time making queso in the crockpot and dangerously easy. One package of velveeta was plenty for 14 people, keep in mind I also served a LOT of other food. The velveeta package says it’s 16 servings. Next you just need a can of rotel, some water, shredded cheese, soy chorizo and some more green chile. I say more because the rotel has some green chile in it but I find it to be very mild. I added some good old hatch New Mexican green chile and it really hit the spot.

If you aren’t a vegetarian and want to use normal chorizo, it’s very possible. Just get a tube and cook it on the stove top then add it to the crockpot with everything else. If it becomes very oily, just scrape the oil off the top with a spoon or something similar before mixing.

Not listed is the 505 jars of green chile that I’ve seen at Costco or other major grocery stores. If you are looking for the hot Hatch green chile cans, I can never find hot in stores but I have found them on Amazon. This are a must have in our pantry.

  1. Cube the velveeta and dump in a small crockpot.

  2. Add your soy chorizo to the crockpot.

  3. Add the can of rotel to the crockpot.

  4. Add the water in the crockpot.

  5. Add in the shredded cheese. 

  6. Lastly, add the green chile and lightly mix everything before heating on high for 1-1.5 hours on high.

  7. When it is done cooking, stir and enjoy!
