I threw together these quick and easy nachos from Trader Joe's ingredients. It was so good! I love nachos, but sometimes they can be disappointing. Sometimes I order them when out and only the top layer has the topping goods and cheese, or sometimes the cheese isn't melted all the way. The best nachos are slathered in toppings and with lots of cheese in every layer.
Making nachos on a baking sheet means you can spread out the chips and make sure that everything has some topping love. I used parchment paper at the bottom for easier clean up, especially because we are working with cheese. I has some daiya vegan cheese sauce to get rid of, so I cut off the corner tip of the sauce package and squeezed it around on the chips. You can totally skip this, don't worry! Next, I added some beans. Pick your favorite bean, I used white kidney beans because that is what I had. It was perfect! For the meat I used the traditional carnitas from Trader Joe's. All you need to do is microwave it. This changes so much time. I added some seasoning: garlic, cumin, paprika and a dash of cheyenne. No need to measure, just season generously and to taste. When that was done I shredded it and spread it out on top of the nacho chips. Now you can add your other toppings: jalapeños, black olives or whatever you prefer. Last, top with lots of shredded cheese. I baked at 400 for 10-15 minutes until the cheese is nice and melted. My favorite part is drizzling with the jalapeño sauce from Trader Joe's. We go through that bottle so fast in my house!
I highly recommend keeping the carnitas on hand. This is so easy to prepare. I've bought it several times now. Usually for some quick but tasty tacos. It is also great on baked potatoes.
