Endive bites are a tasty appetizer and super easy to make. This is a great appetizer to use if you aren’t using a cheese board. Hot pepper jam is something I always have. It is great for a variety of appetizers and delicious on cheese boards. You can find it at most grocery stores, and I typically find some at T.J. Maxx.
Endives have a bitter taste to them so the creamy goat cheese and hot pepper jam compliment it nicely and tone it down. Any hot pepper jam will do, but I love this one with bacon. You can always sprinkle on bacon bits which would be delicious, or go without. This can be vegetarian friendly!
To prepare the endives, cut the end off and rinse them well and pat dry. Spoon each endive leaf with about 1/2-1 tbsp of goat cheese, then top with the hot pepper jam. You can serve right away or pop in the fridge for an hour until you are ready to serve. These are a breeze to make so they may not be something you need to prep before.
1 endive made about 10 endive bites. I like to plan for each person to have 3-4 each. You do the math.

cut the the head of endives off to separate the leaves, rinse pieces and pat dry

spoon approx. .5-1 tbsp of goat cheese into endive pieces

top with hot pepper jam and bacon bits (if jam is baconless- omit if vegetarian)

serve immediately, or let chill for up to 1 hour.
