Green Chile Crab Dip

This green chile crab dip is so good! It's the perfect appetizer for cheat day or to bring for the holidays to impress your friends and family.

Like many good dips, it consists of mayo, cream cheese, sour cream and more cheese. Instead of regular cream cheese I used a green chile dip that is sour cream based. I know it's commonly found in New Mexico and I assume Texas because it appears to be manufactured in Texas. It's so delicious! If you can't find it, don't worry. Use regular sour cream with a bit extra garlic salt, perhaps. Add in whatever seasoning you want. Fresh garlic would be amazing. I will definitely do this next time but I whipped this together for a game night party when I was already running late. Not only that, I forgot the cream cheese and had to run back to the store!

You may notice I used a container of lump crab meat and a can of crab, which I drained well. The recipe calls for 12 oz of crab. The lump crab meat is better quality however it's usually over $20 for 8 oz. I didn't want to spend over $40 so I got 1 can of crab instead of 2 containers of 8oz lump crab meat. The canned crab is 6 oz undrained and 4 oz drained, so it's perfect! You could make this recipe with all canned crab but I think it's worth it to at least get 1 container of lump grab meat from the deli/fish department.

The amount of green chile you will use will depend on the spice level. I would start with what is suggested, or the 3oz cans of green chile and eyeball it. The mild green chile cans are very mild to me so I would use more. I tend to find some hotter green chile to use. If you need recommendations on how to find good chile, check out this blog. This 505 chile found at Costco, Whole Foods and a few other stores is what I used. Great to always have on hand! If you can't find hot chile, try dicing up some jalapeños or using some cheyenne.

I put the dip in this ceramic quiche dish that I got from Amazon. I have 2, I highly recommend you get one. They are excellent for quiches, dips and egg bakes.
