This hamburger salad is what I came up with after our Mother's Day BBQ. It's a great way to get rid of leftovers. If you cooked your beef then simply break it up, heat it and top it on your salad. You really don't even need to break it up, just smack in on the salad. We had a lot of leftover ground beef so I browned it with a generous amount of taco seasoning. This recipe is a great way to get everything tasty about a burger but without the bread. I swear, I can make anything a salad!
Whether you are trying to cut calories or you just can't find good gluten free buns, it's a nice alternative. You can use whatever lettuce you like, but I liked using iceberg lettuce, which is the lettuce of choice for burgers in my opinion. Then you add your toppings that you would normally put on a burger. I added pickles, caramelized and raw onion, chopped tomatoes and cheddar cheese. Jalapeños, cooked mushrooms or goat cheese chunks would also be great. If you don't eat meat you could easily break up your veggie burger or top with your favorite frozen burger options, I like the salmon and shrimp burgers from Trader Joe's.
Still have leftovers? Make crustless quiche or egg bites!
Chop up your lettuce and add it to your bowls.
Brown and season your ground beef generously with taco seasoning. If you don't have taco seasoning use: paprika, cumin, garlic, salt and pepper. Add your cooked beef to the salads.
Caramelize your onions by cooking with oil or butter on medium heat until done. Top on your salad. You can also sub for or include raw onion.
Chop up your tomato and add to your salad.
Add the pickles and/or jalapeños.
Shred some cheddar cheese and sprinkle on top.
Drizzle with thousand island dressing and enjoy.
