Lox Salad

Bagel and lox, hold the bagel please! This salad has all my favorite bagel and lox toppings without the carbs or cream cheese. You can use your typical salmon used with bagel and lox or any type of smoked salmon. I went with the pastrami style smoked salmon from Trader Joe’s. It’s one of their least expensive ones and is absolutely delicious. It’s one of my top Trader Joe’s items, without a doubt. You can check out my complete list in the blog.

The dressing I used was the Trader Joe’s Cucumber Kefir Dressing. I was looking for something creamy to go with the salad to make up for the lack of cream cheese. If you don’t shop at Trader Joe’s just look for something creamy. I added the rest of my favorite toppings: pickled onion, cucumber, capers, and fresh cracked black pepper. I also added some crumbled cheese for extra creaminess. feta or goat works great! It’s hard to go wrong with this salad. I do indulge in bagels sometimes, but this hits the spot when I have a craving but I’m trying to cut down on bread.

Instructions

  1. Wash and prepare your lettuce and place in bowls.

  2. Drizzle dressing on lettuce.

  3. Add pieces of smoked salmon.

  4. Top with choice of: capers, onions, cucumber, avocado, crumbled cheese of choice and fresh cracked pepper.
