Peanut Butter and Jelly Grilled Sandwich

It's peanut butter and jelly but make it grilled! I grew up eating this and it's my comfort food. A friend's family introduced this to me in middle school, I believe. I've been making them ever since. I would make them for kids I babysat and for friends over the years. Everyone loves them! There is something that is so deeply satisfying about a warm PB & J. Some people have commented that they toast the bread, but it's really not the same as a grilled sandwich. Also, trust me when I say to use mayo on the outside instead of butter. I learned the mayo trick recently and it's game changer on grilled sandwiches.

When you are loading your sandwich, don't be shy with the PB & J. The bread I used really soaked it up so next time I will load it up so it's dripping with the ooey gooey goodness. You can use whatever PB & J you want, I like creamy peanut butter. I used Udi's bread because that it what I recently could find but my favorite is probably Trader Joe's or Canyon Bakehouse gluten free bread. If you want to take your sandwich to the next level you can add honey or bananas. Some people like to use nutella but I like to keep it classic.

  • gluten free bread
  • peanut butter

Instructions
  1. Add a generous amount of peanut butter to one slice of bread and jelly to the other. 

  2. Join the slices together the add a nice even layer of mayo to the outside of the bread, get to every corner and edge. 

  3. Add the sandwich to a nonstick or buttered pan and heat on medium to medium lightly lowered. Cover with pan and let sit for a few minutes. 

  4. Once the bread is browned, flip and repeat.

  5. Once the next side is browned, remove, slice and enjoy!
