Pear, Prosciutto and Burrata Salad

If you have been watching my Instagram story lately then you know I've been on a major salad kick. It started with a trip to Palm Springs with the ladies and ended with me not fitting in any of my pre-COVID summer clothes. Thus, I went to the grocery store and immediately purchased a bunch of salad ingredients. Eating salads is great, but it doesn't have to be boring and bland. This salad is my favorite thus far. My husband, who generally won't eat salads, told me this was a salad he could eat every day. That is how you know it's good!

This salad is light, with the prosciutto and the pears but creamy with some of that burrata cheese. Burrata cheese is very underrated. It's the hidden gem of cheeses. I'm telling you! Some of the most expensive restaurants I've been to will just serve Burrata, prosciutto, a little arugula and olive oil for an appetizer. Of course, it's meant to put on bread but this salad is much better, trust me. I added capers and fresh cracked pepper to top it off. The dressing is just some olive oil and a little balsamic. Lite, delicious and all around perfect spring salad!

Ingredients
  • arugula
  • proscuitto
  • capers
  • olive oil
  • balsamic
  • 1 pear (chopped)
  • burrata cheese
  • fresh cracked pepper
Instructions
  1. Prepare you lettuce base by adding the arugula. 

  2. Drizzle some olive oil and balsamic over the arugula. 

  3. Add you chopped pear and 1.5-2 slices prosciutto per salad.

  4. Spoon in some burrata cheese over salad. 

  5. Add capers and fresh cracked pepper.

  6. Drizzle with a little more oil and balsamic and ENJOY!
