Vegan Pinwheels

Is this an appetizer or a meal? I’ve certainly used them for both. I’ve made these pinwheels for picnics as finger food and I recently made them for lunch when I was on a zoom break while working from home. These pinwheels can be vegan or vegetarian. Can you tell that I’ve been thinking about my vegetarians and vegans lately? The first batch I made was full on vegan with the apple, chickpeas, vegan cream cheese and Frank’s buffalo wing sauce. I used that combination for 2 pinwheel rolls and tossed in some goat cheese crumbles to the mixture for the next 2 pinwheel rolls. If you are not dairy free you can use regular cream cheese as well. The apple is what I use for crunch. I used a granny apple because I like the sweetness with the Frank’s sauce. I’ve also used bell peppers instead of apples. Celery is also an option for some nice crunch. For the onion, if you want something less harsh then try pickled onions.

I tried 2 difference kinds of gluten free tortillas for this, Mission and Trader Joe’s quinoa flour. I tend to always like Mission tortillas in general however the Trader Joe’s can be good for quesadilla or anything heated. They do not work well for this recipe because they crack and dry out. The Mission tortillas rolled very nicely. I saran wrapped them once rolled for about 15-20 minutes to help them keep their shape. This does help but can be skipped if using mission tortillas.

Vegan Pinwheels

  1. Slice a granny apply around the core and put in the mini food processor. Add 1/8 an onion and pulse a few times until chopped with no big chunks. You can use raw or pickled. Add half of this to a large bowl and the other half in another bowl to the side. 

  2. Drain and rinse a can of chickpeas and add to the mini food processor. Add the cream cheese and wing sauce and pulse a few times to combine, but not too much. You still want some chunks. Add to the bowl with the apples. 

  3. Mix together the apples and chickpea mixture until well combined. Add more apples as needed to get the crunchy consistency you desire and more Frank's for your desired heat.

    If using goat cheese crumbles stir them in here
  4. Get your tortillas out and divide the mixture over the 4 tortillas and spread out evenly. Securely roll them all.

  5. Use 4 pieces of saran wrap to individually and securely saran wrap them and let them sit for 15-20 minutes in the fridge.

    This step is optional but will help them keep their shape
  6. When ready to serve, unwrap them and slice into pinwheels. Serve with chips.

    if the ends are loose without filling, slice of the ends first
