This veggie kielbasa bowl is delicious and very easy. It's quite interchangeable as well! You can mix up the veggies by adding in carrots, canned green beans, cabbage or whatever you feel like. You can also mix up the seasoning. This time I used a spicy chipotle base but I've also done cumin base or Italian and paprika. BBQ sauce also works.
This meal is easy to make in the crockpot as well, and I included directions below. In this video I used different veggies and the 21 seasoning salute from Trader Joe's. If you use a can or 2 of green beans you don't need broth or water. It might help to double the recipe or at least use some extra veggies. It is excellent for meal planning. It is easy to dump it and let it cook for several hours. I added a picture below. Here is another kielbasa recipe I use in the slow cooker that is good served over rice or as is. It is sauce based. I've served this as an appetizer at parties and people love it!
For the Kielbasa, I used Hillshire this time, I had at least 1 person message me on Instagram and said they had issues with this one but there are no gluten ingredients in it, nor is it labeled gluten free. On the Hillshire Farm website, the rope Polska kielbasa is listed as gluten free. If you aren't comfortable with these options, there are several gluten free sausages out there. I've never had an issue with Hillshire.
Alternative Seasoning:
-Cumin, paprika and garlic salt
-Cajun seasoning
-21 seasoning salute
-Paprika, Italian seasoning, garlic salt
-BBQ sauce

Below is another version of crockpot kielbasa, this version usually tastes better with some sauce added after (red chile, BBQ, hot sauce, more seasoning, soy sauce). At the very least, add kimchi.
Peel and chop the sweet potato and saute with oil on the stove for about 10 minutes or until the sweet potato is softened and almost cooked through. While the potato is cooking, combine your spices and set aside for when ready.
Add the sliced onion and mix together. Continue to cook.
Cut the kielbasa and zucchini and add it to the pan. Continue to cook. Mix occasionally to cook evenly.
Add a tbsp at a time of the seasoning until you get the consistency/taste you like.
Continue to cook until veggies and kielbasa are cooked through.
Serve with kimchi.
Add veggies then seasoning to crockpot.
Add the broth or water. Omit if using canned green beans.
Cook for 3-4 hours on high or 6 hours on low.
